How kitchen quantities are calculated

Each menu item can carry a portioning rule — for example, three pieces per guest. When a BEO is generated for 50 guests, that item shows a kitchen quantity of 150, not 1.
You can also set a per-line “kitchen quantity” on manual proposal items when you want to override the rule. If no rule is set, the BEO uses the line quantity as-is.
